Grilled Butternut Squash is the perfect Summer recipe. I have never made any butternut squash recipes and randomly wanted to try some. Here is the first recipe I tried. For me squash has a weird texture since there is no crunch, but the char from the grill added some good texture. My husband and I both enjoyed this recipe and will be making it again.

Variations
- We started cooking this on indirect heat and moved it over half way through to direct heat. It was not cooking with indirect heat.
- Next time I may add some rosemary to this.
- I attempted to make this recipe with my potato peeler. Mine is strictly for potatoes. You will need to make sure you have a vegetable peeler. I had to use a knife to remove the skin.
- You need to make sure you have a nice sharp knife. Butternut squash I find very hard to cut through. Reminds me of a very thick carrot.
- It would be possible to cook this in a saute pan on the stove top. You would have to do it in rounds. It would most likely have a more even char to it. I would cook it over medium – medium high heat, with a lid.
