This recipe for Easy Meatloaf does not get much easier and I bet you have most the ingredients in your house. I know everyone always says they only like their Mom’s meatloaf, which I would say the same most days. My husband even told me he did not like meatloaf at all. Once he tried this recipe, it is the only meatloaf he will eat. My reasoning for not liking meatloaf is I do not like vegetables in it, and this recipe is exactly that. This Easy Meatloaf recipe reminds me of a cheese burger with no bun. It is easy, simple ingredients, and kid friendly! I mean doesn’t everyone love donuts?

Ingredients for Easy Meatloaf

  • 1 lb ground beef
  • 1 egg
  • 2 slices Kraft Singles American cheese
  • 1/2 box Better Cheddar Crackers, crushed
  • 1 cup+ Ketchup, if too dry add a little more than 1 cup
  • Salt to taste
  • Pepper to taste

Directions for Easy Meatloaf

Prep Time: 5 minutes / Cook Time: 45 minutes

  1. Preheat over to 350 degrees.
  2. In the medium mixing bowl, put 1 egg, cheese broken up, crushed crackers, ketchup, salt, and pepper, mix.
  3. Next, add the ground beef and mix with your hands.
  4. Form meatloaf into a donut shape and place in 8 x 8 greased baking dish.
  5. Place in the oven and bake for 45 minutes.
  6. Remove meatloaf once cooked and serve.

Variations

  • You can use any cheese cracker like Cheez-It, but to me it does not taste the same. It will still turn out fine.
  • You can drizzle ketchup on top if you would like, growing up we never did.
  • You can cook this in a load pan, I think it tastes better in a donut shape.
  • Growing up we did green beans and Parmesan noddles with this. I like to do Parmesan rice and a vegetable.
  • I have never done it, but this would be good as a sandwich.
