Carmellettas

Carmellettas are one of those desserts I grew up coming home to after school. It reminds me of a layered chocolate chip oatmeal cookie with caramel. I remember growing up my mom would have us help her unwrap all the caramels and we would always eat some along the way. For the flavor this recipe has, it is a fairly simple recipe with your everyday ingredients. This is a great recipe to have your kids help you with as they cannot really mess them up. Plus who really wants to unwrap 64 caramels themselves! I highly suggest getting the pellets. I hope you and your kids enjoy this recipe as much as I did growing up and still do to this day.
Ingredients for Carmellettas
- 64 caramels or 1 and 1/2 bags caramel pellets
- 10 tablespoons heavy cream
- 2 cups flour
- 2 cups oatmeal
- 1 and 1/2 cups brown sugar
- 1 teaspoon salt
- 1/2 teaspoon baking soda
- 1 and 1/2 cups (3 sticks) butter, melted
- 1 package chocolate chips

Directions for Carmellettas
Prep and Cook Time: 45 minutes
- Preheat oven to 350 degrees.
- In a large mixing bowl, mix flour, oatmeal, brown sugar, salt, and baking soda.
- In small microwave safe bowl, melt butter.
- Dump butter into large mixing bowl with dry ingredients and mix well.
- In your greased pan, dump 2/3 of mixture and press down.
- Bake for 15 minutes.
- While the crust bakes, in a small sauce pan add caramel and cream.
- Melt on the stove top on medium heat until all caramel is liquid. Set aside.
- Pull crust out at 15 minutes. Sprinkle chocolate chips over crust. Drizzle caramel over chocolate chips. Then crumble remaining cookie mixture over top.
- Bake for another 25 minutes.
- Pull pan out and let cool for several hours.
- Cut and serve.
