Crockpot Beef Stew is a recipe that I never actually crave and it never really sounds that great to me. But I know others love this recipe and my husband is always asking me to make this during the Winter. Although, this meal never sounds good to me, it always hits the spot when I do make it. I find this to be a cheaper meal that is super easy. Growing up we always served this with white bread and butter. Every once in awhile my mom served it with beer bread, but I prefer white bread with this recipe. The best thing about Crockpot Beef Stew is it can cook for 12 hours in the crockpot. This is not a recipe you want to cook on high for half the amount of time. The longer this recipe cooks, the better, and I promise your house will smell great!
Ingredients for Crockpot Beef Stew
- 1 – 1 1/2 pounds lean beef, cut into 1” cubes (some grocery stores have “beef stew meat”)
- 1/2 bag red potatoes, cubed
- 1/2 – 1 pound carrots, sliced (petite carrots work too)
- 2 – 3 cans French onion soup
- 2 – 3 tablespoons butter
- Salt to taste
- Pepper to taste

Directions for Crockpot Beef Stew
Prep Time: 15 minutes / Cook Time: 8 hours – all day
- Place meat, potatoes, and carrots in crockpot once cut up.
- Dump French onion soup over top.
- Add butter, salt, and pepper.
- Cook in crockpot on low at least 8 hours, but all day is best.
- Serve in a bowl with bread and butter.
Variations
- You could leave the butter out for a healthier option and dairy-free.
- Added chopped onion if you like extra onion.
- Add chopped celery.
- You can easily add some extra spices like onion powder or garlic powder, but I love it the way it is, so I have never changed the recipe.
- You can try different potatoes, but I did not care for russet potatoes with this recipe.
- Add multi-color carrots for extra color.
