Crockpot Garlic Parmesan Chicken and Potatoes

Overall Crockpot Garlic Parmesan Chicken and Potatoes was a good base recipe to use. I made a lot of changes and would do it different the next time I make it. But it’s a great healthy dinner option that goes in the crockpot!
Ingredients for Crockpot Garlic Parmesan Chicken and Potatoes
- 4 boneless, skinless chicken breast
- 1 lb baby potatoes, halved
- 1 tablespoon minced garlic
- 1 teaspoon Italian seasoning
- 1 teaspoon paprika
- 1 cup grated Parmesan cheese
- 1/2 cup chicken broth ( I would use 2 cups)
- 1/4 cup olive oil (I would leave out)
- Salt and pepper to taste

Directions for Crockpot Garlic Parmesan Chicken and Potatoes
Prep Time: 15 minutes / Cook Time: 6-8 hours
- Taste Trek
- First put garlic, paprika, Italian seasoning, salt, pepper, Parmesan cheese, oil, and broth into the crockpot and mix with a fork.
- Next place chicken in crockpot and mix, set aside.
- Then place potatoes in crockpot and mix.
- Next place chicken back in crockpot, on top of the potatoes. Make sure there is enough broth, that it is touching the chicken.
- Turn crockpot to low and cook 6-8 hours.
- I served mine with parmesan rice, enjoy!






Variations
- I would completely leave the oil out but replace with chicken broth plus some extra.
- When I followed the original recipe, I did not marinate the chicken. I’m sorry, but I will never marinate something to then put it in a crockpot.
- There was not enough liquid to reach the chicken so it got really dry. The liquid that was in the crockpot was super runny, couldn’t be used as a sauce. So to prevent dry chicken, I would just add more broth so the chicken can cook in it.
- This would be super easy to add other vegetables to, carrots would be great!
- I had butter and sour cream out for the potatoes but my family loved them without any toppings.
