Pizza Stuffed Chicken is the perfect healthy pizza recipe. I came across this Pinterest recipe when I was on a diet and craving pizza. It totally satisfied my pizza craving and I didn’t have to deal with all the bloating and fullness after eating this. There are lots of different ways you could make this recipe but pepperoni pizza is my favorite. I like to serve with a side of cottage cheese and side salad.
Ingredients for Pizza Stuffed Chicken
- Four boneless skinless raw chicken breast
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1/2 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1 cup pizza sauce
- 2 cups shredded mozzarella
- 1/4 cup Parmesan cheese
- 32 slices pepperoni
- 1 teaspoon minced parsley

Variations
- You can easily add whatever pizza toppings you like, Canadian bacon, sausage, veggies, black olives, pineapple.
- I buy a 15 oz jar of pizza sauce and use the entire thing. I put the extra sauce around the chicken.
- I change it up from mozzarella, pizza mix, and Italian mix cheese, but I use an entire 8 oz bag of shredded cheese. I sprinkle the extra on the top.
- I use an 8 x 8 pan and only cook two chicken breast. Between my husband and I, we always have leftovers.
- I have seen a spin off of this recipe. You pound the chicken flat. Cook the chicken. Then add your pizza toppings and cook until cheese is melted. I have never tried this. But this recipe has two layers of toppings and the chicken cooks in the pizza sauce so it does not dry out, so I stick with this recipe.
