Crockpot Chicken Corn Chowder Plated

If you are looking for a change up in your normal recipes then Crockpot Chicken Corn Chowder is a good recipe to try. The great thing about this recipe is you can make it very mild or very spicy. We prefer mild in our house but I plan to add some additional spice next time I make this. Some fresh chopped peppers added at the end would add some great flavor. I plan to use fire roasted corn next time as well. There is really no need to cut up the chicken unless you want to speed up the cooking time on this. Overall, this recipe has a great flavor and is pretty different then any other soup recipe I have made thus far. Enjoy!

Ingredients for Crockpot Chicken Corn Chowder

  • 1 lb raw boneless skinless chicken breast
  • 2 garlic cloves, minced
  • Two 15 oz cans creamed corn
  • 15 oz can corn, fire roasted corn, or Mexi-corn, drained
  • 15 oz can black beans, drained
  • 4 oz can diced green chiles, or fire roasted diced green chiles
  • 2 teaspoons chipotle or regular chili powder
  • 1/2 teaspoon paprika
  • 1 and 1/4 teaspoons ground cumin
  • 1 cup chicken stock or broth
  • FRESH, 2 cups Colby and Monterey Jack cheese
  • 2 cups half and half or heavy cream
  • Salt to taste
  • Pepper to taste
  • Toppings: cheese, sour cream, hot sauce, lime, cilantro, jalapenos, tortilla strips, chips

Directions for Crockpot Chicken Corn Chowder

Prep Time: 10 minutes / Cook Time: 8 hours

  2. Place chicken, garlic, creamed corn, corn, black beans, green chiles, chili powder, paprika, and cumin to the crockpot. Turn to low for 8 hours.
  3. Remove chicken and shred on a plate with two forks.
  4. Before adding chicken back in, add fresh grated cheese and half and half. Stir well.
  5. Place chicken back in soup and mix.
  6. Serve with your favorite toppings.

Variations

  • I made this very bland the first time as I do not do spicy. Next time I will do the fire roasted corn. You can easily kick the spice level up or down on this recipe. Add a spicy chili powder, hot green chiles, and add some jalapenos.
  • I left chicken whole. Since I left the chicken whole, I cooked on low for 8 hours.
  • You could swap out the beans for other types of beans, pinto or red beans.
  • Next time I make this I will add an extra can of beans.
  • You could chop up Jalapenos, red and green peppers and add to the crockpot about 2 hours before it is done.
  • Add a chopped onion for an extra vegetable.
