Chicken Cauliflower Fried Rice

Chicken Cauliflower Fried Rice is a great healthy alternative to regular fried rice. I found the cauliflower absorbed the soy sauce and other flavors very well. My husband and I could not tell that it was cauliflower used as rice. My pictures may seem off compared to what the recipe calls for, I halved the recipe when I made it.
Ingredients for Chicken Cauliflower Fried Rice
- 1 lb raw boneless skinless chicken breast, diced
- 2 eggs
- 3 teaspoons sesame oil, divided
- 1 teaspoon olive oil
- 12 oz frozen vegetables (carrots and peas mix)
- 1 small white onion, diced
- 3 cloves garlic, minced
- Two 10 oz bags of steamable cauliflower rice, prepared
- 3 tablespoons soy sauce
- 1/4 cup green onions, sliced
- 1 teaspoon sesame seeds

Directions for Chicken Cauliflower Fried Rice
Prep Time: 5 minutes / Cook Time: 25 minutes
- Grab your frozen vegetables and lay them on the counter while you prep everything.
- Place cauliflower in the microwave and cook.
- Using a knife or scissors, cut chicken into small pieces and place on plate.
- Using your knife, dice the onion.
- Grab your sauté pan and place on the stove top on medium – medium high heat.
- Add 1 teaspoon of the sesame oil and olive oil.
- Once hot, add your chicken and brown.
- Once your chicken has browned (about 5 – 7 minutes), put on a clean plate and set aside.
- In the same sauté pan, add 1 teaspoon sesame oil.
- Once oil is heated, add your vegetables. Stir vegetables around and cook for 3 – 5 minutes.
- Add garlic and stir for one minute.
- Put vegetable mix to the side of the pan.
- Add 1 teaspoon of sesame oil to the other side of the pan.
- Add your two eggs to the same side as the oil and scramble.
- Once your eggs are fully cooked, add your cauliflower rice and chicken back to the pan and mix everything together.
- Now add your green onion, soy sauce, and sesame seeds to pan and mix.
- Serve with additional sesame seeds and soy sauce as needed.
Variations
- We really do not care for onion, so I swapped the onion with dried onion flakes.
- I used a frozen vegetable mix of peas, carrots, corn, lima beans, and green beans. You can use what you want.
- I topped mine with eel sauce, so good!
- You can leave the chicken out for a vegetarian option, or replace with any type of protein you want.
- Next time I make this, I am going to add a couple extra eggs. I love the egg pieces in fried rice.
