Crockpot Meatball Subs is a recipe I grew up having. I never realized how easy the recipe was until I moved out and asked my Mom how she makes them. The best part about this recipe is it works great for a busy day when everyone may be eating at different times. Once the meatballs are cooked, about three hours, people can start eating. You can continue to cook the meatballs for about eight hours as long as it continues to be stirred. This is also why this recipe works great for work potlucks or parties.

Ingredients for Crockpot Meatball Subs

  • 28 oz bag Italian or homestyle frozen meatballs
  • 24 oz traditional spaghetti sauce
  • Sub sandwiches
  • 8 oz mozzarella cheese, shredded (bagged is fine)

Directions for Crockpot Meatball Subs

Prep Time: 5 minutes / Cook Time: 3 – 8 hours

  1. Dump frozen meatballs into the crockpot.
  2. Dump sauce into crockpot.
  3. Stir everything up the best you can.
  4. Turn crockpot to low.
  5. You can serve once meatballs are thawed. But you can continue cooking all day. This recipe does need to be stirred every hour otherwise, it will burn on the sides.
  6. Turn oven on to broil on low.
  7. Once ready to eat, you can place meatballs on sub sandwich, add cheese, place in baking dish.
  8. Broil on low for 3 – 5 minutes or until cheese is bubbly.

Variations

  • If you want your bread more toasty and crunchy. Preheat oven to 375 degrees. Cook sandwiches for 10 – 15 minutes.
  • When we are feeling very lazy, or if you like soft bread for your meatball sandwich. Place meatballs and cheese on sub sandwich and serve.
  • I love to have cottage cheese as a side with this recipe.
  • We usually fit about 4 – 5 meatballs on a sandwich. You can easily measure out the number of meatballs for the number of people eating. Just place the extra meatballs back in the freezer for next time.
  • I have made this recipe for a work party. I made the meatballs in a large crockpot and got mini subs. It did take about 4 – 5 hours for the meatballs to be ready.
  • For a healthier option or even low carb, skip the bread. You can also use 100% whole wheat bread.
  • Leave out the cheese for your dairy-free option.
