Easter Poke Cake was the perfect dessert for Easter Day. It is a cool refreshing dessert that is not too heavy. It has a lot of steps to making it, but I had a lot of fun watching it all come together. I will be making this again in the future, possibly for other holidays, just change up the coloring. You can make this in advance by a couple of days, but I would make sure to wrap it. I would also wait to add the whipped cream until a couple hours before you serve. Whipped cream will pick up any scent in your fridge easily. Overall this recipe was great, and I will make it again. Just make sure you have plenty of time throughout the day to assemble.
Ingredients for Easter Poke Cake
- White cake mix
- Ingredients listed on cake mix box, usually eggs, oil, and water
- Food coloring
- 2 white chocolate instant pudding mix
- 3 and 1/2 cups milk
- 2 cups heavy cream
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- Sprinkles
Utensils Needed
- Medium mixing bowl x 2
- Whisk
- Rubber spatula
- Measuring cups
- Measuring spoons
- 4 – 5 small bowls
- 4 – 5 table spoons
- 9 x 13 glass pan, cannot be shallow, greased
- Handheld mixer or KitchenAid mixer
- Metal spatula for serving
Directions for Easter Poke Cake
Variations
- When mixing the pudding mix and milk. Mix and pour over cake right away. Do not stir for the full two minutes as directed on the pudding box.
- You can make this for any holiday, just change the food coloring and sprinkles. 4th of July, Red, White, and Blue.
- This recipe is better the longer it sits as the pudding can soak into the cake. I would wait to top with whipped cream until right before you serve.
