Lunch Lady Peanut Butter Fingers are a good recipe but not what I am looking for. Growing up in school, we had these peanut butter bars. They were so soft, they would sometimes fall apart when you picked them up. I honestly can’t remember exactly what they taste like, but I crave them constantly, weird I know! So I will continue looking for that recipe. Lunch Lady Peanut Butter Fingers are a nice crunchy bar. Everyone I shared with loved them and I thought they were tasty but a bit crunchy for my liking, hence peanut butter finger. It did remind me of eating a Butterfinger candy bar.

Ingredients for Lunch Lady Peanut Butter Fingers

  • 1 cup butter
  • 1 cup peanut butter
  • 2 cups flour
  • 2 cups oats
  • 1 cup brown sugar
  • 1 cup sugar
  • 1/2 teaspoon salt
  • 1 1/3 teaspoon baking soda
  • 1 teaspoon vanilla extract

Frosting

  • 1/2 butter
  • 4 cups powdered sugar
  • 4 tablespoons milk
  • 1 teaspoon vanilla extract
  • 1/4 cup baking cocoa powder
  • 1/8 teaspoon salt

Variations

  • I used my KitchenAid mixer and I am glad I did. the dough gets pretty thick! You can mix by hand but prepare for a sore arm.
  • My dough never did ball up. I was going to add more peanut butter but wanted to follow the exact recipe. Next time I would add an additional 1/2 cup of peanut butter.
  • I used quick oats for my oats, I think any oat would work.
  • To make it peanut free, you can substitute the peanut butter for almond butter.
  • I used a 9 x 13 jelly roll pan, as I do not have anything large at this time. If you have a large jelly roll pan, I would use that.
