Mexican Marinated Tacos

Mexican Marinated Tacos are the perfect Summer taco! You can use chicken or steak. I use my minute steak from our cow we get each year. It really soaks in the marinade nicely and it is cut thin and tenderized. Great for slicing for tacos. I do have a couple recommendations, if you plan to make this, listed in the variations section as I did change some stuff on this recipe.
Ingredients for Mexican Marinated Tacos
- 3 – 4 pounds chicken or steak
- 1/4 cup olive oil
- 1/4 cup stemmed cilantro
- 2 tablespoons minced garlic
- 1 tablespoon chili power
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1 teaspoon kosher salt
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon ancho chili powder
- All your taco fixings: Tortilla, sour cream, cheese, tomato, lettuce, onion, corn, beans, rice
Utensils Needed
- Ziploc bag – Gallon
- Measuring cups
- Measuring spoons
- Knife
- Cutting board
Directions for Mexican Marinated Tacos
Prep Time: 5 – 10 minutes / Marinade Time: 2 – 24 hours / Cook Time: Steak: 10 -15 minutes, Chicken: 15 – 25 minutes
- Place all ingredients, besides meat, in a Ziploc bag and mix around.
- Add the meat, then mix around again.
- Place in the fridge overnight if possible.
- When ready to cook, grill on the grill until desired doneness.
- Slice meat and assemble tacos!
Variations
- I leave cilantro on the stem in large pieces, I remove before grilling. Since it is a fresh herb, it will just burn on the grill.
- I typically use my minute steak for this recipe as it is thin and gets a nice coating of seasoning.
- In the future I will use garlic powder. The minced garlic sticks to the steak and somewhat burns when grilling.
- Ancho chili powder so far I have only found in a large container and it is expensive. Since this is the only recipe I have that calls for it, I just substitute with extra chili powder.
- This recipe would be great for a Mexican steak or chicken salad.
- I have used sirloin steak, which was good. I also have done chicken. I cut the chicken horizontally so they were not as thick. I have grilled and pan seared the chicken, great both ways!
