Poppy Seed Bread

This Poppy Seed Bread recipe is about the only Poppy Seed Bread I will eat. I am not a fan of lemon or lemon flavored food. Typically Poppy Seed Bread has lemon in it but this recipe has no lemon. This recipe has a strong almond flavor to it with a sugar coating on top. I grew up with my mom making these into mini loafs of bread. She would Seran wrap them and put them in the freezer. Right before leaving for school I would grab one to go. By the time I got to school it would be thawed to eat during my first class. This recipe is great for mini muffins for little kids. They will love their own personal muffin!
Ingredients for Poppy Seed Bread
- 3 cups flour
- 2 1/4 cups sugar
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons salt
- 2 tablespoons poppy seed
- 1 1/2 cups milk
- 1 1/8 cups vegetable oil
- 3 eggs
- 1 1/2 teaspoons vanilla flavoring
- 1 1/2 teaspoons almond flavoring
- 1 1/2 teaspoons butter flavoring
Glaze Ingredients
- 1/4 cup orange juice
- 3/4 cup sugar
- 1/2 teaspoon vanilla flavoring
- 1/2 teaspoon almond flavoring
- 1/3 teaspoon butter flavoring
Utensils Needed
- Large mixing bowl
- Spatula
- Measuring cups
- Measuring spoons
- Small bowl
- Whisk
- Muffin pan or bread loaf pan, greased
Directions for
Prep Time: 15 minutes / Cook Time: 15 – 20 minutes mini muffins – 1 hour large loaf
- Preheat oven to 350 degrees.
- In a large mixing bowl, mix all ingredients in order with the spatula.
- Mix all ingredients for 1 – 2 minutes or until no clumps.
- Pour into greased pan and bake.
- While the bread bakes. In the small bowl add orange juice, sugar, vanilla, almond, and butter flavoring. Whisk together until well combined.
- Once bread is baked, (toothpick should come out clean) give your juice mixture another stir and pour over bread.
- Let sit for 5 minutes, then remove bread from pan. (Juice mixture will dry and cause bread to stick if you do not remove)
- If you made mini loafs or mini muffins, you can wrap in Seran wrap and freeze.
