White Chicken Chili

White Chicken Chili is a great healthy recipe that is Whole30 compliant. Since I am not following that diet, I did add pinto beans and corn. The coconut milk in this recipe, I thought may give the soup a slight coconut flavor. But I cannot taste coconut at all, just some added sweetness. I top mine with some hot sauce to help cut some of the sweetness. The first time I made this, I actually made another soup as I questioned this one. No one ended up touching the other option. Overall this soup has great flavors and tastes just as good leftover.
Ingredients for White Chicken Chili
- 1 and 1/2 lbs raw skinless boneless chicken breast
- 1 yellow onion, diced
- 1 bell pepper, diced
- 1 jalapeno, seeds and membranes removed, diced
- 6 clover garlic, minced
- 2 and 1/2 teaspoons ground cumin
- 1 teaspoon dried oregano
- 1 tablespoon chili powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups chicken broth
- 14 oz can full fat coconut milk
- 1/2 lime, juiced
- 1/2 lime, sliced into wedges
- 1/2 cup fresh cilantro, chopped
- 16 oz can beans – pinto – optional
- 16 oz can corn – optional
Utensils Needed
- Cutting board
- Knife
- Crockpot
- Measuring spoons
- Measuring cups
- Two forks
- Plastic plate
- Utensil Spoon
- Can opener
Directions for White Chicken Chili
Prep Time: 20 – 30 minutes / Cook Time: 7 – 8 hours

- Dice all of the vegetables.
- Place the onion, pepper and jalapeno in the bottom of the crockpot. If adding any beans or corn, add them now.
- Add garlic, cumin, oregano, chili powder, salt and pepper. Mix.
- Place the chicken on top of the vegetable mix.
- Dump broth on top and place the lid on the crockpot.
- Set the crockpot on low and cook for 6 -7 hours.
- Pull the chicken out onto a plate. Using the two forks shred the chicken, then place back in the crockpot.
- Turn the crockpot to high.
- Add the coconut milk and stir, place lid back on. Heat for 15 – 20 minutes.
- Add lime juice and cilantro, and stir. Adjust any seasoning then serve.
- Top with additional cilantro, lime wedges, sour cream, cheese, chips.
Variations
- I love to add pinto beans and corn to this. It would not be Whole30 compliant at that point.
- You can add additional broth to make it more soupy. You can also use any broth of choice.
- Cilantro is optional. I leave it completely out as I am one of those people that cannot stand it.
