Bacon and Cheese Quiche

Bacon and Cheese Quiche is my favorite type of quiche. So many different ways to make this with different ingredients, but this is always my go to. This is a great dinner option, my Mom always made it for dinner. But it can also be served as breakfast. She always made a bacon and cheese one and a ham and swiss one. That fed a family of 8. The center of this reminds me almost of a custard more than eggs. It is very smooth.
Ingredients for Bacon and Cheese Quiche
- 1 9″ pie shell
- 8 slices bacon, diced
- 1 cup shredded swiss cheese
- 1 cup shredded cheddar cheese
- Dash nutmeg
- 1 tablespoon flour
- 3 eggs, beaten
- 1 and 3/4 cup milk

Directions for Bacon and Cheese Quiche
Prep Time: 20 minutes / Cook Time: 40 minutes, center should almost be set / Cool Time: 10 minutes
- Preheat oven to 450 degrees.
- In a pan, cook bacon on medium – medium high heat until crispy.
- Once oven is preheated, blind bake the pie shell for 7 minutes.
- While the pie shell bakes, place all the ingredients, including the cooked bacon in a medium mixing bowl, mix.
- Remove pie shell from oven. Turn the temp down to 325 degrees.
- Pour egg mixture into pie shell.
- Return pie shell to oven for 35 – 40 minutes, or until center is almost set.
- Remove quiche from oven and let set for 10 minutes. It will firm up a little more.
Variations
- I used fresh bacon and grated my own cheese. You can buy pre-made bacon and shredded cheese. The cheese melts better when it is fresh.
- You can swap out the bacon and cheese for any ingredients. Sausage and spinach, ham and swiss, cheddar and fresh peppers and onions.
- You can make fresh pie dough, make sure to blind bake first. I just used a frozen crust to save on time.
