Mom’s Banana Bread, one of my favorite snack or breakfast recipes. I love banana bread! It is always so easy to make and uses up what would typically be food waste. My Mom always made these in mini bread loafs for us to take on the go. Worked great when I was in high school and having morning practice. I would throw a frozen loaf in my bag. It would be thawed by the time I went to my first class. I love about any type of banana bread, but for some reason my Mom’s recipe has always been my favorite. Enjoy!

Ingredients for Mom’s Banana Bread

  • 1/2 cup butter, softened
  • 1 cup sugar
  • 2 eggs, separated
  • 8 tablespoons cold water
  • 3 very ripe bananas
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 2 and 1/2 cups four

Utensils Needed

  • Medium sized mixing bowl
  • Spatula
  • Small mixing bowl
  • Handheld electric mixer
  • Measuring cups
  • Measuring spoons
  • Mini loaf pan or other baking pan

Directions for Mom’s Banana Bread

Prep Time: 10 – 15 minutes / Cook Time: 40 minutes – large loaf, 20 minutes – small loaf, 8-12 minutes – mini muffins

  1. Preheat oven to 350 degrees.
  2. In a medium sized mixing bowl, place the butter and sugar. Mix until creamed together.
  3. Separate your eggs, place the egg whites into a small mixing bowl. Place the egg yolks into the bowl with the butter and sugar.
  4. Add the rest of the ingredients to the mixing bowl with the butter and sugar, mix well. I usually add one ingredient at a time and mix a little.
  5. With your egg whites, mix with a handheld electric mixer until stiff peaks form.
  6. Add the egg whites to the rest of the ingredients and fold in gently. Make sure they are mixed well.
  7. Place batter into greased pan, bake as directed.

Variations

  • You can add chocolate chips or nuts to the batter.
  • My favorite are the mini muffins or mini bread loafs. You can freeze the bread and thaw as you need them. With a small family, we can never eat an entire batch before they go bad.
