Pork Chops and Potatoes with Gravy

Pork Chops and Potatoes with Gravy is a meal in itself. I do occasionally serve with peas or green beans to add some color to the plate, as it is lacking some color. But I can tell you, it is not lacking flavor. I love to make this recipe on a cold winter day, as it will warm you up. This is a great recipe that will feed a large group or help with meal prepping for the week. You could easily downsize this recipe, but you will have extra gravy, which is not a bad thing. For a recipe with such simple ingredients, it packs a lot of flavor.
Ingredients for Pork Chops and Potatoes with Gravy
- 4-8 butterfly pork chops – do not get the thick cut
- Salt to taste
- Pepper to taste
- 1/4 – 1/2 cup flour
- 1-2 tablespoons butter
- 10.5 oz can cream of chicken soup
- 1-2 cups milk
- 1/2 – whole 5 lb bag potatoes, peeled and diced
Utensils Needed
- 9 x 13 baking dish or bigger
- 2 large plates
- Saute pan
- Knife
- Potato peeler
- Cutting board
- Can opener
- Plastic tipped tongs for flipping pork chops
Directions for Pork Chops and Potatoes with Gravy
Prep Time: 30 minutes / Cook Time: 1 hour
- Preheat oven to 350 degrees.
- Peel and dice potatoes. Place in greased baking dish. Set aside.
- On your large plate, place your flour and spread out.
- Next, salt and pepper your pork chops to taste.
- Add 1 tablespoon butter to your saute pan on medium to medium high heat.
- Now coat your pork chops in the flour. as you coat them, add them to the saute pan and brown on each side. Should only take 1-2 minutes on each side to brown. May have to repeat if all the chops do not fit in the pan at one time.
- Once chops are all browned, place on clean large plate and set aside.
- In your same saute pan, add soup and stir with drippings.
- Add milk until gravy consistency.
- Salt and pepper gravy to taste.
- Add 2/3 of gravy to potatoes and stir.
- Then, place pork chops on top of potatoes and add remaining gravy on top.
- Cook until potatoes are soft and pork chops are no longer pink.
Variations
- We have not tried this yet, but I am sure carrots would be good mixed in with the potatoes.
