Homemade Potato Soup

Homemade Potato Soup has the simplest of ingredients but is so tasty! When I think of a budget friendly meal, this recipe always comes to mind. One great thing about this recipe is you can easily cut in half or quarter the recipe for small batches. I always cook the full amount as it is great for leftovers during the week. Growing up my Mom always made this and served the Hanky Panks recipe as a side so to this day, those recipes belong together in my book.

Ingredients for Homemade Potato Soup

  • 5 lbs russet potatoes, peeled and diced
  • 1 and 1/2 tablespoons dried minced onion
  • 1/2 cup or more half and half
  • Salt to taste
  • Pepper to taste
  • Toppings optional: crumbled cooked bacon and shredded cheddar cheese

Directions for Homemade Potato Soup

Prep Time: 20 – 30 minutes / Cook Time: 30 – 45 minutes

  1. Fill pot half way with cold water and place next to cutting board.
  2. Next, dump potatoes in sink and rinse off.
  3. Peel skin off one potato, then dice into 1 inch squares. Add to pot with cold water.
  4. Repeat step 3 until all potatoes have been peeled, diced, and added to pot of water.
  5. Once all potatoes are diced, make sure there is enough water to cover the potatoes but nothing more and nothing less
  6. Add dried minced onion to pot with potatoes.
  7. Place pot with potatoes on your stove and turn to high to boil.
  8. Boil until potatoes are done, 10-20 minutes. (A fork should go through the potato easily when done, or you can try a bite).
  9. Once cooked, turn burner to medium – low heat. Take 1/3 of diced potatoes and place in medium bowl and set aside.
  10. Now take your immersion blender and blend what is in pot until smooth.
  11. Once smooth, add your cream, salt, and pepper. Blend a little more. (You can add as much cream as you want).
  12. Once soup is to the consistency and taste you like, add your potatoes in the medium bowl back to the pot. Stir.
  13. Using ladle, serve into small bowls. Top with bacon and cheese if you would like. Enjoy!
Potato Soup with Hanky Panks

Variations

  • You could use chopped fresh white onion in place of the dried onion.
  • Add additional seasoning like garlic powder.
  • Could use almond milk to make it dairy free. This will thin the soup and may add sweetness to it.
  • We always serve with cheddar cheese and bacon. You could also serve with fresh white onion or green onion.
