It does not get much easier than Easy Mexican Chicken Soup. All you have to do is open everything and dump it in a crockpot, then let it cook all day. This is a great healthy meal option that will also allow you extra meals for during the week. I usually only make the soup but decided to make corn bread the day I made this, which goes great with it.
Ingredients for Easy Mexican Chicken Soup
- 1 lb raw boneless skinless chicken breast
- 1 packet dry ranch seasoning
- 1 packet taco seasoning
- One 16 oz can black beans, drained
- One 16 oz can corn, drained
- One 16 oz can red beans
- One 16 oz can tomato sauce
- One 16 oz can petite diced tomatoes
- One 10 oz can Rotel
- Cheddar cheese, sour cream, Fritos, tortilla chips, Jalapenos, and any other topping you would enjoy
Utensils Needed
- Crockpot
- Can opener
- Two forks for shredding chicken
- Plate
- Ladle for serving
Directions for Easy Mexican Chicken Soup
Prep Time: 10 minutes / Cook Time: 8 – 10 hours on low in crockpot
- Open black beans and corn, drain.
- Open the rest of the cans.
- Place chicken in bottom of crockpot.
- Dump all cans and seasonings into crockpot on top of chicken, stir.
- Turn crockpot to low and cook.
- A half hour before eating, pull the chicken out and shred. Add back to crockpot and stir.
- Let re-heat for 30 minutes, then serve. Enjoy!
Variations
- You can easily swap the beans out for any type of bean you prefer. Pinto beans would be a good option.
- Add extra beans, corn or tomatoes if you prefer extra of something.
- Easily add cut up fresh peppers or jalapenos about an hour before this is finished cooking for extra flavor and spice.
- The toppings for this is endless, just like chili. But we enjoy cheese, sour cream, and chips.
