Parmesan Asparagus Side Dish

Parmesan Asparagus is the perfect Summer side dish. We love to make this with a grilled steak or pork chop. It is a pretty simple recipe with basic ingredients. You can easily leave the cheese out or add different seasoning.
Ingredients for Parmesan Asparagus Side Dish
- 1 – 2 asparagus bundles
- 1 – 2 tablespoons extra virgin olive oil
- Salt to taste
- Pepper to taste
- 1/4 – 1/2 cup Parmesan cheese

Directions for Parmesan Asparagus Side Dish
Prep Time: 5 minutes / Cook Time: 15 minutes
- Snap root end of asparagus off. Then place in saute pan.
- Drizzle 1-2 tablespoons of extra virgin olive oil over the asparagus and stir.
- Place on medium to medium high heat and put the lid on.
- Cook for about 5 minutes, take the lid off and stir.
- Cook for another 5 minutes with the lid on.
- Once you can stick a fork nicely through the asparagus (sometimes I take a bite of one spear to see if is done), turn the burner to low. If the fork cannot go through the asparagus nicely, give it a couple more minutes and check again. Repeat if needed.
- Once asparagus is cooked, add salt and pepper to taste, stir. Then add Parmesan cheese and place the lid back on. Leave on the burner until cheese is melted.
- Serve with any meal you desire.
Variations
- For dairy-free, leave cheese out. Add a seasoning instead.
- You can add Asparagus to boiling water for about 7 minutes to cook it. You lose a lot of nutrients boiling it, so I prefer to saute.
- If your asparagus is stringy and hard to bite through, it is over cooked, but still edible.
- For added flavor, add some raw bacon bits and cook with the asparagus.
