Bacon, Egg, and Cheese Casserole is one of the best breakfast casseroles I have ever had. I love the added creaminess from the cream cheese. My mom always made this for when we had brunch. It pairs perfectly with my Mom’s Hashbrown Casserole recipe. the two recipes paired with fresh fruit and cinnamon roles will complete any brunch you have planned.

Ingredients for Bacon, Egg, and Cheese Casserole

  • 1 loaf French bread, crust removed and discarded then cubed
  • 8 oz block monteray jack cheese, shredded
  • 8 oz block medium cheddar cheese, shredded
  • 8 oz package cream cheese
  • 1 package bacon, fried and crumbled
  • 10 eggs
  • 2 cups milk

Directions for Bacon, Egg, and Cheese Casserole

Prep Time: 20 minutes / Rest Time: 1 – 12 hours / Cook Time: 45 minutes

  1. Cut bacon up into sauté pan. Cook over medium high heat until crispy.
  2. While the bacon cooks, shred your cheese. I use my KitchenAid mixer attachment when I have large amounts of cheese to shred.
  3. Remove bacon to a paper towel to drain grease.
  4. Next, remove crust from bread, then cube. Sometimes I find it easier to shred with hands.
  5. In a greased 9 x 13 pan, place 1/2 the cubed bread.
  6. Add 1/2 the bacon, cheese, and cubed cream cheese over the bread.
  7. Repeat layers.
  8. In a medium mixing bowl, mix the eggs and milk well.
  9. Pour egg mixture over the bread.
  10. Wrap pan in Seran wrap and place in the fridge for 1 hour up to 12 hours.
  11. Preheat oven to 350 degrees.
  12. Place 9 x 13 pan in the oven for 45 minutes.
  13. Once baked, use a metal spatula or knife to cut and serve.
