Balsamic Rosemary Chicken Plated

Balsamic Rosemary Chicken is a super easy and healthy dinner recipe. You can easily prep it in the morning before work and let it sit during the day. You can cook this how ever you would like, but we opted to grill it. The char added so additional flavor which I always love. The left over chicken is great as is or goes well in a rice bowl, wrap or on a salad for lunch the next day. My husband was not a fan of this recipe, but balsamic vinegar has a very strong flavor to it, and he is not a fan of that. I love it, so I absolutely loved this recipe, and the rosemary paired perfected with balsamic vinegar.

Ingredients for Balsamic Rosemary Chicken

  • 1 – 2 lbs raw boneless chicken breast
  • 1/4 cup balsamic vinegar
  • Splash of white wine
  • 1/3 cup extra virgin olive oil
  • 1 Tablespoon dried rosemary
  • 1 teaspoon italian seasoning
  • 2 Tablespoons dijon mustard
  • Salt and pepper, to taste

Prep Time: 5 minutes / Marinate Time: 1 hour – 12 hours / Cook Time: 10 – 20 minutes

  2. Throw all the ingredients into the bag and mix around.
  3. Place in the fridge to marinade.
  4. The chicken took about 8 – 10 minutes a side on the grill around 450 degrees.

Variations

  • I always cut my rosemary up into small pieces. I love the flavor but not the large pieces of it when taking a bite.
  • I am sure you could roast the chicken in the oven, or even chop it up and saute in a pan.
  • I always cut my chicken in half horizontally to save on cooking time. When marinading, I also think it gives it even more flavor.
  • You can use any sort of meat that you would like. Chicken and lamb would probably go best with this.
