Chicken and Wild Rice Soup, this recipe is so easy! I had a recipe party at my house and a co-worker brought this, I was amazed at how great it was! I thought it was going to be difficult to make. But once I saw the ingredients and that it was a crockpot meal! I was so excited to add it to my recipe book. The best part about this recipe is it can easily be cut in half, or even doubled. It can also easily be adjusted if you want a more soupy or thick soup. Vegetables can be added for extra nutrition.

Ingredients for Chicken and Wild Rice Soup

  • Two 10 oz cans chicken, drained
  • Two 10.5 oz cream of mushroom soup
  • 32 oz chicken stock
  • 2 boxes Rice-A-Roni long grain and wild rice

Directions for Chicken and Wild Rice Soup

Prep Time: 5 minutes / Cook Time: 4 – 5 hours on low

  1. Place all ingredients in crockpot and stir. Shred up chicken if there are large chunks.
  2. Cook on low for 2 – 3 hours or until rice is done. Stir occasionally.

Variations

  • You could use rotisserie chicken and shred it, rather than canned chicken.
  • I halved this recipe for my family. Feeds about 2 – 3 people halved.
  • You could dice up some mushrooms and add. Along with shredded carrots, onion, celery.
  • If you like a creaminess to your chicken wild rice soup, you can add half and half at the end.
  • If you want the soup to be more soupy, add extra chicken broth. If you like thicker, I would start with less and add as needed.
