Crockpot Chicken Pot Pie Soup

Crockpot Chicken Pot Pie Soup is a great healthy recipe that has a lot of different options for cooking and ingredients. With any soup recipe, I am always looking for a way to make it in my crockpot, so that is the first adjustment I made. I also found the soup to be lacking flavor so I added additional ingredients. This recipe is great on a cold Fall day. You will have lots of leftovers for meal prepping for the week or a great meal for a large group as it will fill your crockpot.
Ingredients for Crockpot Chicken Pot Pie Soup
- 1-2 lbs raw boneless skinless chicken breast (fresh or frozen)
- 1 white onion, chopped
- 2 large carrots, sliced
- 2 celery sticks, diced
- 3 cups Yukon gold potatoes, diced
- 1-2 cups peas, frozen
- 1 can corn, drained
- 1 teaspoon dried thyme
- 1/2 teaspoon garlic powder
- Pinch dried parsley
- Pinch dried basil
- 2 bay leaves
- 1 bouillon chicken cube
- Salt to taste
- Pepper to taste
- 24-32 oz chicken broth
- 2 cups almond milk or milk
Utensils Needed
- Crockpot
- Cutting board
- Knife
- Can opener
- Food processor (optional)
- Immersion blender or blender
- Ladle for serving
Directions for Crockpot Chicken Pot Pie Soup
Prep Time: 15-30 minutes / Cook Time: 8-10 hours
- Cut up the onion, celery, carrots, and potatoes and add to crockpot. (Tip: put your onion in a food processor to chop up to your liking. I like mine very fine, as I don’t like onion, so it hides it this way.)
- Place chicken on top of veggies.
- Add your seasoning, thyme, parsley, basil, bay leaves, garlic powder, salt, pepper, and bouillon cube.
- Dump chicken broth on top.
- Cook on low for 8 – 10 hours.
- Remove bay leaves and discard.
- Take 3 cups of mixture, no chicken, and blend using an immersion blender or blender. Add back to crockpot.
- Pull chicken out and shred, add back to crockpot.
- Now add the corn, peas, and milk to crockpot.
- Cook for another 30 minutes to 1 hour.
- Serve with crackers or a grilled cheese.
Variations
- You can add about any vegetable you would like or leave out certain vegetables as well.
- You can skip step 7 of blending part of the soup. It will leave you with a much thicker soup.
- You can easily add more or less of any vegetable or chicken.
- If you want this recipe more soup like, add extra milk and broth and blend an additional cup.
- This recipe can be a great dairy-free recipe, just use almond milk.
