Easy Chicken Enchiladas

Easy Chicken Enchiladas is a pretty easy meal but does take some time to assemble. We love to use our left over ingredients and chicken from my Easy Crockpot Chicken Fajitas recipe, click here for recipe. It adds so much more flavor to this recipe. Plus, we almost always have left over chicken fajita stuff. So when I put Easy Crockpot Chicken Fajitas on the menu, this recipe almost always follows. You can use the recipe link for the directions, otherwise my directions are below. If you do not put any additional toppings in the enchiladas, then corn, beans, or rice are all great side options with this recipe. This recipe is great for feeding a small group of people or meal prepping for the week, as leftovers heat up well.

Ingredients for Easy Chicken Enchiladas

  • 1-2 lbs shredded chicken breast – cooked (can us a rotisserie chicken but does not have much flavor)
  • Pint sour cream
  • 8 oz bag taco or cheddar shredded cheese
  • 10.5 oz can cream of chicken soup
  • 8 tortilla shells
  • 4 oz can green chili – optional
  • Optional ingredients: corn, beans, rice

Utensils Needed

Directions for Easy Chicken Enchiladas

Prep Time: 15 minutes / Cook Time: 25-35 minutes

  1. Preheat oven to 350 degrees.
  2. Mix sour cream, chilies, and cream of chicken soup in a mixing bowl.
  3. Place 1/4 soup mixture to bottom of 9 x 13 pan. Enough to cover bottom of the pan is all.
  4. Now assemble tortillas. Put a layer of the soup mixture on the tortilla shell. Add a layer of chicken, then cheese. This is where you will add any other stuff you want like corn, beans, and rice.
  5. Then roll the tortilla shells up and place in 9 x 13 pan.
  6. Top with the remaining soup mixture, then top with shredded cheese.
  7. Bake for 20-30 minutes or until cheese is melted.
  8. Broil on high for 1-3 minutes or until cheese starts to crisp up and brown.
  9. Remove from oven and serve.

Variations

  • For a healthier alternative, we use whole wheat tortilla shells.
  • We add whatever leftovers we have on hand from my Easy Crockpot Chicken Fajitas recipe. So if I have leftover corn and rice, I add inside the enchiladas with the chicken.
