Crockpot Crack Chicken

Crockpot Crack Chicken is a recipe I got from a good friend at one of my recipe parties. It is a very simple recipe that has a lot of bold flavors that go great together. It reminds me of an updated version of chicken salad. The leftovers make for great hot or cold sandwiches.
Ingredients for Crockpot Crack Chicken
- 2 lbs boneless skinless chicken breast
- 6 bacon strips, cooked OR 1 package real bacon pieces
- 3/4 cup chicken broth
- 8 oz cream cheese
- 1 oz packet dry ranch seasoning
- 1 and 1/2 cups cheddar cheese, shredded
- 1/4 cup green onion, chopped
- King Hawaiian rolls

Directions for Crockpot Crack Chicken
Prep Time: 10 minutes / Cook Time: 7 hours
- Place chicken in crockpot.
- Cut bacon up and dump in crockpot.
- Add Ranch seasoning and broth.
- Set crockpot to low for 6 hours. (high 3-4 hours)
- Shred the chicken and place it back in the crockpot.
- Cut up the cream cheese and add to crockpot, stir.
- Cover and cook for 30 minutes, stir in the cream cheese the rest of the way.
- Top with shredded cheese and green onion. Cook for another 10 minutes.
- Serve on buns.
Variations
- I used pre-cooked bacon slices and just cut them up.
- The King Hawaiian Rolls go really well with this recipe but you can use any buns.
- I like to use scissors to cut up green onion, you can use a knife if you prefer.
