 Crockpot Salsa Chicken with Queso Plated

Crockpot Salsa Chicken is how this recipe started. I added the queso, I could not resist! A lot of burritos at our Mexican restaurant come smothered in queso and salsa, so I had to give it a shot with this recipe. I was speechless! This recipe tasted just as if we actually went to the Mexican restaurant, I was amazed and so was my husband. As we sat and ate this recipe for the first time, we both agreed it was going on the menu for the following week for our family gathering.

Ingredients for Crockpot Salsa Chicken with Queso

  • 1 – 2 lbs raw boneless skinless chicken breast
  • 10.5 oz can cream of chicken soup
  • 1 packet taco seasoning
  • 1/2 cup sour cream
  • 1 cup salsa
  • Tortilla shells, any other toppings you like with Mexican type foods.

  • 1 and 1/4 pounds of white american cheese, cubed or sliced
  • 1/4 cup diced green chiles, from a can
  • 2 pickled jalapenos, chopped (leave out for mild dip)
  • 1 oz pickled jalapeno juice
  • 2/3 cup whole milk
  • 1/2 cup cold water
  • Pinch of cumin (optional)

Directions for Crockpot Salsa Chicken with Queso

Prep Time: 10 minutes / Cook Time: 4 hours on high or 6 hours on low

  2. Place chicken in the crockpot.
  3. In the small bowl, place soup, salsa, and taco seasoning. Mix well.
  4. Dump on top of the chicken. Turn crockpot to high for 4 hours.
  5. Right before you shred the chicken, prepare your queso (recipe here) and other sides.
  6. Remove chicken and shred, then place back in the crockpot.
  7. Add sour cream and stir well.
  8. In a tortilla shell, place chicken and wrap up. Top with queso and salsa. Enjoy!

Variations

  • You can serve chicken over rice instead of in tortilla shell.
  • You can leave off queso, completely skip making that. That is how the original recipe was.
