Easy Monterey Chicken Baked

Easy Monterey Chicken is so simple, quick, and easy. No prepping with this recipe. This is a great week night recipe as it can be made in under 30 minutes. We made asparagus with this, I think maybe salad would go better with it or even a side of mac and cheese or rice. I am not a huge fan of BBQ chicken but the bacon and melted cheese on top was by far the best part. It really took the BBQ chicken to the next level.

Ingredients for Easy Monterey Chicken

  • 2 lbs boneless skinless chicken breast, cut horizontally or pound out thin
  • 6 tbsp BBQ sauce
  • 8 slices bacon regular or thin sliced
  • 4 oz grape tomatoes, quartered – Optional
  • 1 cup shredded colby jack cheese – more or less
  • 2 green onions, sliced – Optional

Directions for Easy Monterey Chicken

Prep Time: 5 minutes / Cook Time: 25 minutes

  2. Preheat oven to 425 degrees.
  3. In a greased baking dish, place your chicken.
  4. Dump the BBQ sauce over the chicken and spread evenly.
  5. Next, cut bacon in half and place the sliced bacon on the chicken.
  6. Place in the oven for 20 minutes. For crisper bacon, broil for an additional 2 – 5 minutes.
  7. Remove the chicken from the oven. Turn oven to 350 degrees.
  8. Sprinkle cheese on top of the chicken and place back in the oven for about 5 minutes or until cheese is melted.
  9. Remove from oven and top with green onion and tomatoes, optional. Enjoy!

Variations

  • I used two chicken breast and cut them in half for four servings.
  • We do not like tomatoes so left those off, which I thought it was still amazing.
  • When cooking BBQ sauce, it will always turn to almost like water. If you want a thicker coating of BBQ sauce, may want to drizzle extra on top once it is done baking.
