Healthy Chicken Tacos is a newer recipe I found on Pinterest. I was hesitant to cook it at first as I do not care for sweet potatoes, onion, or tomato. I sure am glad I gave this recipe a shot! The taco seasoning and enchilada sauce really gives everything a great flavor. I thought maybe the texture would be off with so many different foods mixed but it all works well together. Overall this is a great recipe to get some added vegetables in when having tacos. It is a bit time consuming prepping everything, but it is worth it! It makes almost a full saute pan full and the leftovers heat up really well!

Ingredients for Healthy Chicken Tacos

  • 2 tablespoons olive oil
  • 1 and 1/2 lbs raw boneless, skinless chicken breast, cut into bite size pieces
  • Small yellow onion
  • 1 sweet potato, peeled, par-cooked, and diced
  • 14.5 ounce can petite diced tomatoes, I only use 1 cup but you can add entire can, drained
  • 15 ounce can pinto beans or black beans, drained and rinsed
  • 4 ounce can diced green chilis
  • 1/3 cup salsa or red enchilada sauce
  • 1 and 1/2 packets of taco seasoning
  • Taco toppings: cheese, sour cream, lime juice, cilantro, hot sauce, avocado, taco shells

Variations

  • I mince the onion in my food processor as we are not huge onion people. If you like larger onion chunks, you can cut it up with a knife.
  • The chicken I use scissors to cut up into small chunks. Similar to the size of the petite diced tomatoes.
  • After par-cooking the sweet potato, I try to dice about the same size as the tomatoes.
  • I used petite diced tomatoes as we do not like huge tomato chunks. With having everything similar in size, it reminds me of a hash.
  • This recipe is great by itself, but I prefer it on a taco shell.
  • I like to make recipes easier, so I used pre-packaged taco seasoning and it turned out amazing still.
  • When I made this last, I cut up the chicken and onion and put it in a bowl with a packet of taco seasoning. I let it sit in the fridge for a couple of hours. I thought it gave the chicken some extra flavor.
  • Corn would go great added to this recipe!
  • You could do a small can of Rotel in place of the tomatoes and green chilis. Just make sure it is drained.
  • Leave the cheese and sour cream out for your dairy-free option.
  • For low carb or a little healthier option you can use whole wheat taco shells, carb friendly taco shells, or eat it without a shell. The original recipe is a skillet.
