Lipton Onion Chicken and Veggies is my remake of my recipe for Lipton Onion Potato Squares. I was amazed at how much flavor the Lipton onion dry soup mix adds to this. A bonus is the amount of color you get with this. I used multi-colored potatoes for added color. Could also add the multi-colored carrots, my grocery store doesn’t carry those. This recipe goes great with a side of wild rice. It reminds my of an American style stir fry. This recipe has easily become a favorite in our house, hope you enjoy it just as much!

Ingredients for Lipton Onion Chicken and Veggies

  • 1 – 2 pounds raw boneless skinless chicken breast, diced
  • 1 – 2 broccoli crowns, chopped
  • 1 – 2 russet potatoes, diced
  • 1/2 – 1 pound carrots, sliced
  • 4 – 8 ounces white button mushrooms, sliced
  • Two packets dry French onion soup mix
  • 3 – 4 tablespoons canola oil

Utensils Needed

  • Cutting board
  • Knife
  • 9 x 13 baking dish, greased
  • Tin foil

Directions for Lipton Onion Chicken and Veggies

Prep Time: 15 – 20 minutes / Cook Time: 1 hour

  1. Preheat oven to 400 degrees.
  2. Next, chop up all your vegetables and place in 9 x 13 baking dish.
  3. Mix vegetables with 2 – 3 tablespoons of canola oil.
  4. Sprinkle 1 packet of dry soup mix over vegetables and mix well.
  5. Add your chopped chicken and drizzle with canola oil.
  6. Sprinkle about half of the 2nd packet of dry soup mix over the chicken and mix well.
  7. Sprinkle the remaining dry soup mix on top and mix well again.
  8. Cover with foil and bake for 30 minutes.
  9. Remove pan from oven and stir. Recover with foil and return to oven.
  10. Bake for an additional 20 minutes.
  11. Remove pan from oven, discard foil. Stir well.
  12. Place pan back in the oven and bake for 10 more minutes, or until potatoes are soft and chicken is cooked.
  13. Remove from oven and enjoy!

Variations

  • Any vegetables can be used with this. I added zucchini once. Squash, onion, and brussel sprouts would all be great!

  • Use butter, olive oil, or any other kind of oil with this.
  • You can make a small batch with about one pound of chicken and a smaller amount of vegetables. I would only use one French onion dry soup mix then.
  • The French onion dry soup mix can be cut in half even with the large batch.
