Corn Casserole, I look forward to this each Thanksgiving and Christmas. It is amazing! I do make this occasionally throughout the year to go with chili. If I had a choice between any corn bread or this, I choose this recipe every single time. This is a family recipe that has been passed down to the next generation. Any time I make this and have people over, they love it!
Ingredients for Corn Casserole
- 1 egg
- 8 ounces sour cream
- 15 ounce can whole kernel corn, drained
- 15 ounce can creamed corn
- 1 stick melted butter or margarine
- 1 box Jiffy corn bread mix
Utensils Needed
- Medium sized mixing bowl
- Spatula
- 7 x 11 baking dish, greased (or bigger, I use 9 x 13)
- Microwave safe bowl
Directions for Corn Casserole
Prep Time: 5 – 10 minutes / Cook Time: 45 minutes
- Preheat oven to 350 degrees.
- In the medium mixing bowl, mix the egg and sour cream.
- Add the two cans of corn and mix.
- Place the butter in a microwave safe bowl and melt. (my microwave has a button for this)
- Dump butter into bowl with other ingredients and mix.
- Add the Jiffy corn bread mix, and mix.
- Dump into greased baking dish.
- Place in the oven and bake for 45 minutes.
- Remove from oven and serve!
Variations
- You can easily finely chop jalapenos up and put in batter before baking.
- If you want some sweetness with this, brush with honey once baked.
- You can make this thicker by baking in 8 x 8 pan. May take longer to cook.
- I have doubled the recipe and cooked in 9 x 13 pan. Took a bit longer.
