Corn Casserole, I look forward to this each Thanksgiving and Christmas. It is amazing! I do make this occasionally throughout the year to go with chili. If I had a choice between any corn bread or this, I choose this recipe every single time. This is a family recipe that has been passed down to the next generation. Any time I make this and have people over, they love it!

Ingredients for Corn Casserole

  • 1 egg
  • 8 ounces sour cream
  • 15 ounce can whole kernel corn, drained
  • 15 ounce can creamed corn
  • 1 stick melted butter or margarine
  • 1 box Jiffy corn bread mix

Directions for Corn Casserole

Prep Time: 5 – 10 minutes / Cook Time: 45 minutes

  1. Preheat oven to 350 degrees.
  2. In the medium mixing bowl, mix the egg and sour cream.
  3. Add the two cans of corn and mix.
  4. Place the butter in a microwave safe bowl and melt. (my microwave has a button for this)
  5. Dump butter into bowl with other ingredients and mix.
  6. Add the Jiffy corn bread mix, and mix.
  7. Dump into greased baking dish.
  8. Place in the oven and bake for 45 minutes.
  9. Remove from oven and serve!

Variations

  • You can easily finely chop jalapenos up and put in batter before baking.
  • If you want some sweetness with this, brush with honey once baked.
  • You can make this thicker by baking in 8 x 8 pan. May take longer to cook.
  • I have doubled the recipe and cooked in 9 x 13 pan. Took a bit longer.
